​Home late tonight... 
let's play, "What's in the fridge?" 
The rules: 

-can't take over 30 minutes from start to finish
-must primarily use items in the fridge that need to be "finished off"
-must be easy
-must taste delicious

Wa-Lah! Pasta ala Fridge Leftovers!



-Gluten Free pasta (admittedly not a leftover, but just like good underwear, a girl needs building blocks)
-Some uncooked ground chicken not used in the tacos the other night - about a quarter pound
-Sauteed with leftover homemade turkey stock about 3/4 cup
-Add left over homemade pizza sauce - about 1 cup (make sure it has balsamic vinegar in it :)
-Some cream... there was about 3/4 of a small carton left - to get all the dregs out and add flavor, swish it around with almost a full carton more of leftover white wine
-Keep bubbling this brew and add a tomato (there was one left in the produce drawer)
-Some left over grilled zucchini, chop it up 
-Lots of fresh garlic
-A generous amount of salt
-Drain your pasta and pour into the sauce

Put into bowls and top with some cheese if you have it, red pepper flakes and fresh ground pepper...
Delissimo!!

Potato Bar

One of my family's favorites for dinner... "Potato Bar". 

There are soooo many options depending upon what you have in your fridge. Italian, Mexican, breakfast, or Asian all on whole boiled potatoes! Just boil until soft, split one open, and top with your favorite toppings, or even "just what's in the fridge". You can go crazy with your choices or keep it simple... 

Breakfast potatoes? 
Top with scrambled eggs, sauteed spinach, cheese, crumbled bacon and green onions
Italian?
Pasta sauce, mozzarella cubes, dry cured salami cut in strips, chopped tomatoes, and some olives
Mexican?
Salsa, shredded chicken, cheese, sour cream, avocado, a bit of sauteed or raw shredded cabbage and green onions
You get the idea!

Tonight's assortment of toppings: 
Shredded cheese, feta cheese, bacon, sour cream, onions, salsa, wild cabbage salsa, sliced smoked turkey, sunflower sprouts, tomatoes, balsamic pan seared cabbage, wine glazed mushrooms, and a garlic-wine cheese sauce. Yum! 

And really SO easy!

let's make up a recipe like we do almost every night right before dinner...

Part of my love of the creative is cooking! Some people don't love it, and that's cool, but we all have to eat, so we might as well eat well! This is really an easy-peasy recipe that can be whipped up in no time. I have several versions of it, depending upon what is in the fridge/pantry at the time. I will post other versions of it as I come up with them.
Dinner at The Tree House AKA Home...
Madeira Alfredo Florentine with chicken and heirloom tomatoes, topped with mushrooms and figs, and a splash of balsamic (all gluten-free). AKA... let's make up a recipe like we do almost every night right before dinner.
Gluten free brown rice pasta, boil in salted water as the below is cooking...
2-3 cut up, chicken thighs, sauteed in EV olive oil add...
Madeira, about 1/2 cup, cook chicken for a bit then add...
Cream, about 1 cup, cook until bubbling and starts to thicken, add...
A splash of balsamic vinegar, add...
Pasta water, just a bit to the rest of the "sauce", add...
Spinach and
Heirloom tomatoes and
Fresh Garlic and
Grated Parmesan and
Salt and Pepper... 
cook for about 5 minutes more...
Drain pasta and add to the sauce (instead of the other way around).
Serve topped with sauteed mushrooms, fresh figs, and a drizzle of balsamic vinegar.

Super easy and only takes about 20 minutes!
